Ingredients:
- 1 all-natural, pasture-raised brisket from 3C Beef
- 2 tablespoons kosher salt
- 1 tablespoon coarse ground black pepper
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Your favorite barbecue sauce (optional)

Instructions:
1. **Prepare the Brisket:**
- Pat the brisket dry with paper towels.
- Trim any excess fat from the brisket, leaving about a ¼-inch layer or more, the fat cap gives the brisket great flavor and keeps the meat more tender and juicy.
- In a small bowl, combine the salt, pepper, smoked paprika, garlic powder, and onion powder to create a dry rub.
- Rub the dry rub generously over the entire surface of the brisket, ensuring it is evenly coated.

2. **Prepare the Grill:**
- Prepare your grill for indirect grilling/smoking. If using a charcoal grill, set it up for two-zone cooking by placing charcoal on one side of the grill.
- Aim for a temperature of around 225-250°F (107-121°C). Use wood chips or chunks (preferably oak or hickory) for smoke flavor.

3. **Smoke the Brisket:**
- Place the brisket on the cooler side of the grill, fat side up, and close the lid.
- Maintain a consistent temperature throughout the cooking process, adding more charcoal and wood chips/chunks as needed to maintain the smoke.
- Smoke the brisket for about 1.5 hours per pound, or until it reaches an internal temperature of around 200°F (93°C). This typically takes anywhere from 10-14 hours, depending on the size of the brisket.
