Eye of Chuck is also known as the Shoulder Clod or Beef Clod Heart. Beef Clod Heart is one of the most sacred meats for Texas BBQ. Very flavor cut of beef. Beef Clod is cut from the shoulder and the heart is the tender section in this cut. What most do not realize is the Beef Clod was the headline smoked beef before brisket became popular. Can be cooked like a roast but we think it's best when smoked like a brisket- low and slow.
